What a week it’s been. With everything that’s going on in the world I figured I would take a step back from all of the *new* things we’ve been working on and instead focus on providing content to help you all stay healthy during this uncertain time. And while your stores may be out of items or you’ve been gearing up for a quarantine, I truly believe that while kale salads might not be a realistic option the next several weeks there are a lot of delicious meals you can make using ingredients from your freezer + pantry to continue to nourish your family during this stressful time.

I’ve also decided to shift my focus from software development back to recipe development with all of the new recipes coming the next few weeks utilizing what’s in my freezer and pantry to help give you all even more ideas and creativity.

I thought it would be appropriate today to highlight some of our recipes that utilize ingredients you more than likely have on hand with tips for substitutions in case you’re out of something.

So let’s make the best of this, cook delicious meals + spend extra quality time with those you love the most!

Classic Chicken Salad AHP  727 – this one is great on bread or eaten as is!

Lentil Pasta Aglio e Olio AHP 698 – Skip the spinach or use frozen if fresh isn’t available.

Vegetarian Chili AHP 686 – Omit the bell pepper if needed and use extra carrots if available

Cabbage and Rice Bowl AHP 623 or Green Power Bowl AHP 621 – cabbage holds up way better than kale both raw and cooked so the cabbage bowl is more realistic but if you can get your hands on a couple of cabbage this makes a hearty and healthy breakfast.

Chili Eggplant with Sesame Noodles AHP 633– you can omit the eggplant and just do garlic ginger and noodles.

Instant Pot Peaches and Creme Oats AHP 634 – canned or frozen peaches can be substituted for fresh.

Lemon Chicken with Parmesan Green Beans AHP 632 – sub frozen or canned green beans or any non-starchy green veggie (broccoli, brussels sprouts, asparagus, spinach).

Spaghetti with Fresh Tomato Sauce AHP 637 – sub canned tomato sauce for fresh tomatoes and a sprinkle of dried basil for fresh.

Oatmeal Raisin Cookie Overnight Oats AHP 624 – skip the banana or add some frozen fruit!

Chicken with Marinated Lentils AHP 233 – you can use some storebought jarred pesto instead of the parsley or omit all together!

Caribbean Black Bean Soup with Fish AHP 064  – skip the fish if you don’t have it or sub any white fish.

Misir Wot (Spicy Red Lentils) with Rice AHP 298 

There ya have it – recipes using pantry + freezer staples to keep things exciting.
